Umis Gyoza

Mayumi posted her delicious qyozo recipe here earlier. Last month she found time to introduce me to the art of making gyoza.
So here again with more details for the beginners:

Cut Chinese cabbage and leek very thin, ad salt and let sit for some time. Squeeze (use a kitchen cloth for this).

For 30 pices:

1 tbs miso
1 tbs Sake
grated garlic
ingwer juice

mix all together.

Clean the shrimps 12 pices and ad 1 tbs maizena

Combine with the miso mixture and ad some sesame.
Meanwhile defrost the frozen dumpling skins (round shape)

Add 1 spoon of the mixture to the frozen dumpling skin. Use water for moistening the border.

And now comes the really difficult part fold the gyoza.

Fry on on low heat in a mixture of sesame oil and olive oil (lid on). When they start to take colour ad 3 tbs water and cover let cook till golden.

Winter Veg Thai Meal

ingredients

A Thai style dish made to a large extent with local winter vegetables

Ingredients: Cabbage, ginger, chicory, oranges, chillies, garlic, walnuts and elements of spice curry

Chop the vegetables, garlic and chillies , peel and grate the ginger, peel an orange.

cook the walnuts in butter in a frying pan, adding honey and pepper until shiny golden brown.

Wallnuts and Ginger

Stir fry the garlic, chillies, add curry spice (preferrably first in the oil with the garlic, also adding a little cane sugar), add the vegetables, - cabbage first as it takes longest.

Add salt, throw in the orange. When done, add the nuts

Serve with rice.

Chawan mushi


 chawan mushi -茶碗蒸し-

mix egg and dashi well and steam.
with maschroom and shrimp Ankake sauce. (thickened with powdered kuzu)
make cold body warm.

baked pumpkin with garlic -かぼちゃとニンニクのオリーブオイル焼き-

japanese pumpkin "Hokkaido", simple is best.
baked with garlic and olive oil, then salt and pepper.


very sweet, it taste like marron. buy at market and try!

spinach, soya souce, sesami, sesami paste, sugar and dashi (japanese fish soup)

typical japanese side dish (called Okazu).
it was popular menu among canadian when i was working in vancouver.

marinade paprika japanese style -和風パプリカマリネ-

paprika, ginger, garlic, soya souce, sake, vinegar and sugar.


backed paprika in oven and peel the skin.
marinate and chilled in a fridge.

celery with miso sauce

 celery with miso sauce -セロリのミソ炒め-

Haccho miso or Red miso(八丁味噌), sesami(ゴマ),
Katsuobushi(かつお節/dried bonito) and salt.

recipe is from friend who i met in canada.
i didn't like celery at that time, but even i could try it and love it.

obento box

Obento box -お弁当-

Onigiri(おにぎり/rice ball with Hijiki), 
Sengiri daikon no nimono
 (千切り大根とイカの炊いたん/cooked with dried japanese radisch and squid),
Tamago yaki (卵焼き/Omelette),
トマト/tomato.

for friend who got 2nd baby 5 days ago.
