The common fish in sri lanka is tuna so malas fish curry was made with tuna. I have to admit tuna is to precious for me to use in a curry. I prefer it raw or only briefly cooked so I will replace it with another fish. Haddock might be a good replacement.
You’ll need:
2-3 good chunks of fish
Coconut oil
lot’s of garlic
2 carrots
2 small tomatoes
3 bits of leek
Cinnamon
Turmeric
Curry leaves & Rampa leaves
2 sweet chilies
Coconut milk
In a heavy bottom pan combine the fish and the oil cover with a lid and put on the stove.
Add the roughly cut carrots, half of the garlic and the cinnamon.
Then add the tomatoes, the curry and rampa leaves and the sweet chilies plus the finely cut leek. Let it simmer for 20 minutes. Add 5 tbs of coconut milk and simmer a bit longer. Season with salt and pepper.
