Parsnip Potatoes Patties

Since last december I'm trying to re-cook a meal that, back then came together very spontaneously. We had friends coming over and wanted to make something special but they could not stay to long for they had to get up very early the next day. It's no secret that I'm not good in hosting early dinners, I'm always to late with the preparations which leads to a very spanish lifestyle of late dinners. So we went for beetroot pickled salmon , something you can prepare days ahed and it's is always kind of special.
With it we spontaneously decided to make Parsnip Patties since we had the fridge filled with parsnips.
The dinner was spectacular and the Parsnip Potatoes Patties perfect! Ever since this day I try to re-cook them with little success.

In Stockholm this is a national dish, you get Parsnip Potatoes Patties in every restaurant. Usually served with fish roe, crème fraiche and pickled cucumbers - a match made in heaven.

Even more so I want to make my own Parsnip Potatoes Patties. Mine taste nice but the hardly ever stick together and I end up with a crumbly something on my plate :-(

I know they have to be made very fresh otherwise the potatoes loose too much water and don't sick together, and I add some beaten egg white ... any other tips?

These two turned out quite nice but the remaining 5 looked bad let me tell you ...

Fish pie "Killeel"

I came up with an other variation of fish pie. This time with a Puff pastry and sliced potatoes. To me fish pie is the ultimate comfort food.

You'll need:

  • 2-3 fennel
  • 400 gr white fish
  • 4-5 potatoes
  • Puff pastry
  • Tarragon
  • Dill
  • Cream
  • Salt, pepper and nutmeg
  • shallot

Lay out the dough and sprinkle with the chopped dill. Saute the onion add the fish and cook for 2-3 minutes. Season. Set aside. Meanwhile peel the patatoes and cut into fine slices. Boil in salty water for 1-2 minutes. Drain. Add the cream and season with slat, pepper and nutmeg.
Slice the fennel very finely.
Layer the pie starting with the fish followed by the fennel and the roughly chopped tarragon. End with the potatoes.
Bake in the oven ( 200 °) for 15 minutes or until the pie starts to turn golden.

Serve with a nice green salad.

Spring salad

Spring is good. Last night I made myself this very quick and very tasty salad.  The asparagus and the radish are from our allotment. First harvest this spring.
I don't have cress in the garden but at the moment I really like it I so probably sow some tomorrow. Supposed to be good in keeping the slugs away too.

Luke warm potatoes peeled, radish, some spring onions  greens, a horse radish sour cream dressing , an organic trout filet, some cress and some lemon zest - voilà. Fresh and light and delicious.

Decorate with one asparagus the rest eat with salt pepper, lemon and mayonnaise if you like ( I do ).
The season only started we will eat so much more :-)
