Raw asparagus salad

The garden is dominating of menu again - It's asparagus time and we have to harvest every second or third day.
Luckily Deb from smitten kitchen is always coming up with new brilliant asparagus recipes. After last years asparagus pizza with which is already an absolute favorite at coeur de sel she brings us the ribboned asparagus salad with lemon . I can only recommend it it's delicious.

Shaved asparagus pizza with broad beans

Deb came up with this pizza just when I was about to get bored of my garden grown asparagus.
Raw asparagus on a pizza? Sounded exciting to my ears. I changed the recipe a bit and added blanched fave ( broad beans ), because I put fave on everything at the moment scared of the day where you can't get them anymore. Obviously my garden fave don't grow so enthusiastic as my asparagus .

Shave asparagus with the potato peeler. Blanch and peel you broad beans ( 2 handfull ). Roll out your dough.

Sprinkle pizza your dough with Parmesan ( a good handful), then mozzarella ( I always use buffalo). Pile asparagus on top and bake the pizza for 10 to 15 minutes until edges are browned, the cheese is bubbly and the asparagus might be lightly charred.

You could also try doing it with goats cheese instead of mozzarella.

Can you actually imaging to puree fresh asparagus? This delicious vegetable is way to precious to treat this way, no?  Well I actually did. We have asparagus in our garden and at the moment I almost don't know what to do with them. I gave away plenty ate even more and still there so many.
So yesterday I did it, I came home with a bunch of freshly cut asparagus determined to make a soup.

1 spring onion finely sliced
1 glove of garlic finely sliced
8 asparagus peeled at the bottom and cut into pices ( keep the cone end aside)
1 laurel leaf
1 dl white vine
salt and pepper
olive oil
whipped cream

Sauté the spring onion and garlic. Add the asparagus bits. Add the wine and 3/4 liter good vegetable broth.
Cook for 20 minutes. Meanwhile cook the cones.
Blend the asparagus with the broth and season.

Serve with the cream and the cones on top.
